2023 "Low Carbon Restaurant" Certification Program Meiriki Japan and the Department of Food and Nutritional Sciences at the Chinese University of Hong Kong are collaborating to promote "Sustainable Dietary Habits". They are organizing the "Know Carbon Save Food - Low Carbon Restaurant Certification Program" in different districts in Hong Kong, encouraging more restaurants to provide healthier and more environmentally friendly diet, promoting low-carbon diets, and building sustainable communities.
Program Concept 1. Promote Low "Carbon" Diet Information Increase public awareness of dual low-carbon (low-carbohydrate, low-carbon emissions) dietary patterns. • Low-carbohydrate: Hong Kong people are increasingly pursuing health and reducing the intake of refined carbohydrates (high-carbohydrate) by choosing low-carbohydrate (low-sugar) options, effectively controlling blood glucose and triglyceride levels. • Low carbon emissions: People start focusing on sustainable development by purchasing low-carbon emissions ingredients for procurement, such as local ingredients and vegetarian-based food, while also considering low-carbon operations and waste reduction, which helps to reduce carbon footprints and fight the climate crisis.
2. Establish Healthy and Environmentally Friendly Communities Advocate for healthy and environmentally friendly dietary habits to address the following dietary problems among Hong Kong people and establish a low-carbon atmosphere. • Frequent consumption of refined carbohydrates (high-carbohydrate: such as bread, white noodles, and white rice) • High per capita meat consumption among Hong Kong people • Lack of trace nutrients in the diet
3. Connect Various Sectors of Society Through the promotion of "low-carbon restaurants," more restaurants that embody low-carbon and environmental protection principles are recognized, actively practicing sustainable development, and attracting more customers enjoying low-carbon diet, especially office workers, youngsters and people frequently dine out.
